Cornish Hens With Apricot Glaze

Like me, you probably have a ton of pumpkin pie spice leftover from fall. Even if pumpkin season is over, apricot just happens to meld swimmingly!

 

I tested a few apricot beers in the glaze to see if it made any difference in taste.  I tested the Sea Dog Apricot, Ithaca Apricot Wheat, and Brouwerij De Troch Chapeau Abricot.

 

In the end, they all tasted virtually the same, so don’t stress. Just grab yourself any apricot beer and enjoy some tasty chicken!

 

Ingredients

 

4 cornish hens

1 Tbs. pumpkin pie spice

1 Tbs. garam masala

1/4 tsp. ginger

1/2 tsp. salt

1 large onion, roughly chopped

2 carrots, roughly chopped

1/2 C. apricot preserves

1 bottle of apricot beer

Directions

 

Heat oven to 375. Combine the spices and the salt.  Butterfly your hens then sprinkle them on both sides with all but 1 tsp. of the mixture.

Put the onions and carrots in the bottom of a roasting pan and cover with beer, leaving 1/8 C. aside for the glaze. 

 

Place the hens on top of the onions and carrots and bake for 40 minutes.

 

Combine the preserves with the tsp. of the spice mixture and 1/8 C of apricot beer.  Spread the glaze on the hens.

 

Bake for an additional 15 minutes adding another coat of glaze, and bake until nicely browned.
