Voodoo Maple Bacon Pancakes
1/2 lb bacon
1 c Rogue Voodoo Doughnut Maple Bacon Ale
1/2 c greek yogurt
1/4 c milk
1 Tbs bacon fat
1 Tbs butter, melted
2 c flour ( 1 c all-purpose mixed with 1 c cake)
1 Tbs baking powder
1 tsp baking soda
1/4 c sugar
3/4 tsp salt
Chop up bacon into small pieces then pan fry until crisp. Remove bacon and pour all residual bacon fat into a small bowl for later use.
Mix all wet ingredients together in a medium sized mixing bowl, including the bacon pieces. Then, mix all dry ingredients together in a separate large sized mixing bowl.
Slowly pour wet ingredients into the dry ingredients folding gently into one another. Gently mix until fully combined. Make sure not to over-stir because pancakes will get dense. The consistency of batter should be similar to a thick heavy cream. If batter is too thick, keep adding milk until it gets to the desired consistency.
Voodoo Bacon Syrup
2 parts maple syrup
1 part Voodoo Doughnut Maple Bacon Ale
2T Melted Butter
Heat skillet. Brush lightly with bacon fat. Pour batter into skillet in the desired pancake size. Once batter starts to lightly bubble, flip pancake over. Re-brush skillet after every batch.
