Sausage Stuffing

Getting into the fall spirit with some Sausage Cornbread Stuffing! I used Trader Joe's Cornbread Stuffing Mix as the base and added ingredients from there. With a splash of lager and an egg on top, this recipe is the perfect way to start your morning.  Just in time for the crisp air of fall.

 

The subtle citrus and floral hopping of a pale ale brings to life all the herbs in the stuffing without getting too bitter in the cook-down.  Meanwhile, the malts play with the sweetness of the cornbread and breathe fresh life into the savory sausage.  Now, if I could only button my pants, life would be perfect!

 

Ingredients

1 box Trader Joe's Cornbread Stuffing Mix

5 Tbs butter

1 medium onion, chopped

6 oz hot italian sausage

1 bottle lager

3 C chicken stock

1 egg

Directions

Sautee chopped onions in large skillet until slightly transluscent.  Add sausage, breaking it up with your spoon.  Cook together until meat starts to brown.  Add beer to deglaze the pan, then add chicken stock, butter and seasoning packet from box mix.  Bring to a low boil for 3-5 minutes.  Remove from heat and gently fold in croutons until all are moistened.  Cover and let sit for 10 minutes.  Fluff.  Cook up an egg to your liking, place it on top and vuala! Breakfast is served!
